Crafted to reflect the vibrancy and freshness of the warmer months, the menu was a celebration of spring and summer: refined, creative, and thoughtfully curated. From the very first course to the last, every element was chosen to align with our client’s vision, their brand, and the unique preferences of their guests.
Our culinary team drew inspiration from both native Australian ingredients and global influences, balancing familiarity with innovation. From ingredients like finger lime, macadamia and wattle seed, to globally inspired pairings like halo-halo with purple yam gelato or pepper bark smoked duck with butternut and edamame fruit chutney, the menu was as creative as it was refined.
Paired with exceptional wines (including a standout The Sum Riesling), the tasting experience was designed not only to delight, but to help our client craft a spring/summer offering that reflects their brand, their people, and their guests.
